Baingan Bhartha is a traditional North Indian dish & a vegetarian delight. Traditionally Baingan Bhartha is made from roasted eggplants. Baingan Bharta (Roasted eggplant with Indian spices). You can serve this curry with Indian flat bread, I love to have it with fragrant Basmati rice or it can also be spread on bread ( I liked it so much, I spread it on pizza crust) or also can be served as a dip with tortilla chips. Baingan Ka Bharta requires that the eggplant be roasted. This can be done in several different ways: Roast on a gas cooktop by just placing the eggplant straight on the burner and keeping the flame on low setting.
