Paleo Bangan ka Bhurta (Indian Eggplant)

Mix the smoky eggplant with the spiced tomato masala and eat it with Paleo Chapati or Paleo Naan. This is a very simple, quick and more importantly authentic Indian side dish of grilled eggplant and tomato. Best served with naan or roti. It should have a consistency of, um, well, ‘mush’ when finished, but it’s good. This is a traditional North Indian (Punjabi) Bhurtha made with eggplant and tomato, and seasoned with cumin, turmeric garlic and ginger. Bangan ka Bhurta (Indian Eggplant).

Baingan Bhartha is a traditional North Indian dish & a vegetarian delight. Traditionally Baingan Bhartha is made from roasted eggplants. Baingan Bharta (Roasted eggplant with Indian spices). You can serve this curry with Indian flat bread, I love to have it with fragrant Basmati rice or it can also be spread on bread ( I liked it so much, I spread it on pizza crust) or also can be served as a dip with tortilla chips. Baingan Ka Bharta requires that the eggplant be roasted. This can be done in several different ways: Roast on a gas cooktop by just placing the eggplant straight on the burner and keeping the flame on low setting.
