They use almond flour to avoid the grains, a popular way of making banana bread that is both gluten-free and Paleo approved. Of course they’ll be using bananas to make this, but they’re also incorporating a healthy oil that is OK on the Paleo diet, coconut oil.
Enjoy this gluten-free banana bread made with almond flour and coconut oil, guilt free! I primarily use almond flour in my gluten free bread recipes, as it tastes great, is easy to use (doesn’t require xanthan gum or guar gum) and is a very high protein gluten free ingredient.
In a small bowl, add butter, coconut sugar, almond flour, cinnamon, and pecans. I have made MANY different paleo banana bread recipes and my husband has never been terribly excited about any of them (he doesn’t eat paleo). In a medium sized bowl combine the coconut flour, almond flour, cinnamon, baking soda, cacao nibs, and pinch of salt and mix with a fork to reduce any clumps until thoroughly combined.
