But, alas, the soup bone gods were not on my side that day because the two places to which I go for humanely raised grass-fed beef were completely out, but one of them had a big beautiful meaty shank to which I happily said, …. I’d defrosted a couple of 2-inch center cut grass fed beef shanks, and was looking forward to chucking everything into the slow cooker so I’d have a tasty cabbage and beef shank stew ready to devour when I woke up in the evening. In a large soup pot, heat the coconut oil, lard or tallow over medium high heat and add the beef stew meat and bones and brown the meat for about 7-10 minutes. 2 lbs beef shanks bone-in (cut some of the meat away from the bones but make sure you put the bones IN the soup! ).

These Paleo beef shanks (Ossobuco in Italian) are a classic recipe form my mother, which I just slightly modified to become a perfect Paleo dish! This is my second paleo beef shanks recipe I’ve come up with and I’m calling this one Perfect Paleo Beef shanks because Ger said he could eat this every day.

Paleo soups aren’t that complicated, really. Take some meat, vegetables, and stock, throw them in a pot, heat them up, and you’re golden. Add salt, pepper, and garlic powder to both sides of the beef shanks. How much you use is a matter of taste, but don’t go too heavy with it at this stage.
