Huevos Rancheros is a Mexican breakfast that consists of fried eggs smothered in a spicy salsa. You can leave your sauce chunky or blend it quickly to get a thinner sauce. Top each tostada with a couple tablespoons of the Ranchero sauce, some chicken, and guacamole. Have been thinking about trying to recreate them and the plantain dough is a great paleo alternative! Then it’s topped with fried eggs, avocado, cilantro, and smothered with tomato salsa. The lemon, nutritional yeast, and coconut butter create a dairy-free, vegan cheese sauce in the sweet potatoes.
