Paleo Pumpkin Pie Cake III

Place almond butter, pumpkin, banana, maple syrup, eggs pumpkin pie spice, coconut flour, baking soda, baking powder and salt in a food processor and puree until smooth. My mom made a non paleo pumpkin bread, which i cannt eat, so I made this and it hit the spot! (: 5 out of 5! I followed the basic outlines of my chocolate Paleo mug cake recipe with a few modifications (obviously adding pumpkin) and stuck it in the microwave saying a little prayer that it would not completely suck. I’ll make it again and add an extra egg for the same number of servings. I blended it with a can of coconut milk, 2 eggs, a lot of pumpkin pie spice and vanilla, and two dates.

Next, you can make the cake with fresh roasted pumpkin or the canned variety, just make sure that the cans are BPA-free and have no other ingredients (like thickeners or spices). Your choice, but I prefer to put the paleo baking in a plastic bag and whatever it is is usually even better the next day!
