Sweet Corn and Potato Chowder is thick and creamy, yet made with no cream at all. This sweet potato soup is going to catch the eye of anyone you serve it to, and the great part is that it doesn’t use any artificial coloring agents. Here they’re using chicken, and have backed it up with mushrooms, baby corn, and tomatoes. Today, I want to share with you a semi-paleo corn chowder recipe. Once the potatoes are cooked, use and immersion blender to cream the soup, focusing breaking up the potatoes.

Something about thick, creamy soup just didn’t do it for me. The key to maximum creaminess it to puree some of the corn and potato mixture with some flour.
