With a basic hole cut into the center of my Paleo Bread, my egg stays put, and cooks right in!   It’s magic!   Well not really, but it’s a great idea and I’m always down for new tricks of the trade.

This recipe from Paleo Fondue includes coconut and tapioca flour. For a colorful and crunchy bread alternative, try slices of bell pepper. Cut a large capsicum (bell pepper) into two flat pieces for a Paleo alternative to sandwich bread. Here’s a bruschetta made with chicken instead of bread, so you don’t have to worry if it’s grain-free or not. As shown they’re putting the mix on top of slices of hard salami, a great Paleo choice, but you could also use slices of cucumbers or bell pepper boats, as they recommend.
