Paleo Italian Sausage, Peppers, and Onions

My amazing friends Nom Nom Paleo and Fitbomb have managed to shock me once again. Place your onions, peppers, apples, and jalapenos in a 12 inch cast iron skillet or large pyrex baking dish. My boyfriend loved it too, we used with mild Italian sausage and left out the thyme (just forgot) and really enjoyed it. Paleo-friendly recipes inspired by traditional & international cuisines. 1 pkg Italian sausage (pork or beef) 1 tbsp olive oil 1 med onion, sliced 1 red pepper, sliced 1 green pepper, sliced 2 cloves garlic, minced 1/4 cup each white wine and chicken broth 1 tbsp tomato paste 1/2 tsp each salt, pepper, and dried oregano 1 tbsp fresh parsley, chopped. Paleo Sausage and Peppers. It’s really Sausage with Peppers and Onions but nobody (at least the people I know) ever calls it that. The red onion will caramelize nicely and add a sweetness to the flavor that really compliments the sausage. If you’re a garlic lover, add a clove or two of minced garlic and sauté for about 2-3 minutes before you want to serve.
