I decorated my little gingerbread men with Enjoy Life brand mini chocolate chips (thanks to Bill and Haley from Food Lover’s Kitchen for the idea, and here’s a link to their gingerbread recipe for anyone who wants to try a different version). The chocolate chips melted just enough to stick to the cookies (these didn’t stack terribly well in a cookie jar though). Got food allergies or intolerance? These paleo vegan gingerbread man cookies are perfect if you’ve got food sensitivities. Place cut-out cookies on a baking sheet lined with unbleached parchment paper.

The cookie dough was pretty durable so it could hold up for about 4 weeks before the walls started caving in and it was made from a base of white flour, butter, eggs. One day last month, I was procrastinating on my homework stumbling around the internet, and something hit me: was there a really good-looking, good-tasting paleo gingerbread men recipe out there? I found a couple, and while the recipes themselves seemed intriguing, I didn’t think that the cookies looked very attractive. Apparently I have volunteered myself for a HOLIDAY COOKIES Series. Today my 3 year old and I decided to take on Gingerbread Men in a similar fashion – Gluten, Grain, Dairy, Nut, and Egg Free! And yes, I am calling them Gingerbread Men, though you can easily add a skirt to them.
