Paleo Fig and Prosciutto Pizza

We have all seen fig and prosciutto thin crust pizzas on menus by now. For good reason! Salty prosciutto and sweet figs complement each other well. I don’t eat pizza very often, because I don’t want to eat pizza crust very often. A few years back, I went strict Paleo for a while, and grains were something I discovered I didn’t miss.

Grain-Free flatbread pizza with fig jam, prosciutto, and smoked fontina. egg/nightshade free. What ensued were four months of sipping cappuccino, teaching myself how to paint and draw, and a lot of incredible pizza. Italian pizza is light, with a thin crust and topped with fresh ingredients.

(He’s also been Paleo for several years, so you know that if he’s breaking Amish to get involved in this flatbread, it must be pretty boss. 12 ounces store-bought or homemade pizza dough at room temperature (If you’re going the homemade route, I suggest using this recipe. The sweet fig jam and salty prosciutto really compliment each other nicely.
