Combine shredded chicken, diced avocado, and crumbled bacon in medium-sized bowl. In a separate bowl, combined two tablespoons honey, two tablespoons spicy mustard, a dash of paprika, and a dash of black pepper. Place the chicken, bacon, dates, scallion, celery and grapes in a medium-size glass mixing bowl. Stir to combine. After the bacon was cooked, I left all of the drippings in the pan and added balsamic vinegar and thinly sliced onion to sizzle away for a couple of minutes.
