The biggest offenders are flour or corn tortillas, and refried beans. You may find many gluten-free Mexican recipes that aren’t Paleo because they sub in corn tortillas for flour tortillas. Creamy Paleo Chicken Enchiladas Verdes Let’s start things off with enchiladas verdes, made in the Paleo way substituting sour cream with a special Paleo friendly version made from cashews. In a large bowl, add shredded chicken, enchilada sauce, green chiles, bell pepper, onion, garlic, chili powder, oregano, and salt and pepper. I was feeling sorry for myself that I couldn’t have sour cream or beans, but then I decided to make some mashed cauliflower and the combination was delicious.

Beans are a no-no on Paleo, and this soup recipe deftly avoids them, but still delivers on the flavor you are wanting. 1 (15-ounce) can black beans, rinsed and drained 1 (4-ounce) can diced green chiles 1/3 cup prepared salsa, mild, medium or hot homemade taco seasoning (see recipe below) 1/2-1 cup red enchilada sauce 4-6 (8-inch) whole wheat tortillas 1 1/3 cups shredded Monterey Jack and or Cheddar cheese. Where I grew up they were slathered in a red chile enchilada sauce, accompanied by salty refried pinto beans, and topped with copious amounts of gooey yellow cheese. It was so flavourful, I didn’t have any Poblanos so I substituted with a couple of dashes of red chiles, and next time I would add I red pepper and 1 green bell pepper for added colour. I’ve added everything fro chicken, beans, yellow squash, and tonight I’m going to try butternut squash.
