Shredded chicken, vegetables, and a tangy lime infused broth make this chicken & lime soup to die for. Apple pie baked oatmeal. Add hominy, radishes, tomatillo, bean and corn salsa, chicken broth, fresh greens and cilantro. Looks festive and tastes wonderful. Serve with lime wedges, tapatio and heated corn tortillas for dipping.

 For those unindoctrinated, as I was, hominy is dried corn that has been soaked in lye, lime & ash until it pops open and takes on a unique spongy, chewy quality. Stir in the chipotles and adobo sauce, then stir in the chicken broth. Lower the heat and simmer for 15 minutes, skimming any foam. Speaking of soup, this comforting Slow Cooker Split Pea Soup can be made with or without ham, to be vegan. I wanted it soupy so I only used two boneless skinless chicken breasts, and I added some hominy.
