Paleo Brined and Roasted Whole Turkey

Every November, the prospect of roasting a whole turkey strikes fear into the hearts of even experienced cooks.

Using a turkey brine can add flavor and moisture to your traditional Paleo poultry dish. To save room in your refrigerator, you can brine your turkey in doubled up turkey size oven bags or brining bags. 1, tablespoon (s) , peppercorns, whole. Enjoy a pastured turkey and make your whole turkey recipe a little more paleo. *If you have purchased a frozen turkey, you will need to thaw it 3-4 days before you intend to brine it or roast it.

If you’ve never tried dry brining a turkey, give it a shot this year! Funny thing was that while we were cooking our turkey in the oven, my Dad was outside cooking 86 turkeys for his Sunday school class’s Thanksgiving fundraiser. Pro tip: In recent years I’ve been doing a dry salt brine, where you salt the turkey two or three days before cooking it, inside and out.
