Flaxseed Coconut Pancakes with Fresh Blueberries. I always thought people just sprinkled flaxseed in their cereal and in smoothies to make them healthier but as it turns out, flaxseed can also replace or reduce the amount of eggs, oil and flour in many recipes. Anytime you add flax to a recipe you are going to be adding omega-3, as well as fiber, making this a healthy boost to your breakfast, and a way to make things even healthier. No pancake list would be complete without a mention of blueberry pancakes, perhaps the most popular pancakes on the planet.
These flax pancakes are nut-free and easy to whip up. I didn’t add any additional sweetener and found them plenty sweet with the blueberries and natural applesauce. Blueberry pancakes-vegan and grain-free. I don’t cook with flax considering its extremely delicate and really shouldn’t be exposed to heat. To me, they are the fast food of Paleo! 1/2 C flax seeds (ground) ; 1 C flax seeds (not ground) ; 3 Tbs coconut oil melted; 1/4 C agave; 1/2 C water; 1 C blueberries; 1/4 C coconut (unsweetened, dried).

Paleo does however favor nuts and seeds (except for peanuts) , so I think to myself a little golden flaxseed meal will be just the ticket to round out this recipe!
