Paleo African Autumn Stew (Adapted from Forks Over Knives) (Difficulty-Easy; Serves 6) 2 Tbsp bacon grease or grass-fed butter 1 lb kosher free-range turkey 1/2 c organic pars­ley, chopped 1 organic free-range egg 1/3 c almond meal salt and pepper 3 tsp smoked paprika, divided 3 tsp cumin, divided 2 Tbsp corian­der, divided 1/2 tsp ground cinnamon 1 large onion, diced 2 organic car­rots, peeled and diced 2 stalks organic cel­ery, plus leaves, diced3 cloves gar­lic, minced 1 Tbsp. A hearty West African-inspired stew of chicken thighs and legs, sweet potatoes and peanuts that is perfect for a chilly day. We ate it over rice and had it with beef instead of chicken, but this version sounds delicious. An African Chicken Stew that is gluten, peanut and diary free. Featuring coconut milk and almond butter this rich, spicy stew is Paleo friendly. While her rendition is awesome, I wanted to beef up the veggies a bit to make it more of a meal-in-a-bowl.
